Minus 8 Vinegar Original Barrel, 60ml

Original Barrel Minus 8 vinegar is drawn from the very first barrel they produced. Produced in 1997, it is Minus 8’s oldest vinegar. Each bottle has an eyedropper for precise application. 

The vinegar is aged in French oak barrels to deepen its flavour. It’s naturally concentrated with an intense fruit flavour. The initial sweetness is followed by crisp acidity. Expect notes of figs, toasted nuts and caramel.

Original Barrel Minus 8 vinegar is best used as a finishing condiment. You can use it in the same way you would use aged balsamic vinegar. Add a few drops to a platter of charcuterie or elegant canapés. The bold flavour also complements carpaccio and bruschetta.

This unique vinegar adds depth to sauces and gravies. You can add a dash to slow cooked stews for a hint of sweet-sour tang.

About Minus 8

Minus 8 is a family-owned vineyard in Niagara, Canada. The name refers to the temperature at which the grapes are harvested. They are pressed while still frozen, resulting in a sweet juice known as ice wine. This is then fermented to produce vinegar.
