The brand started by making sake over 150 years ago, before turning to soy sauce. The sweet, dark soy sauce in this set is fermented with akazake rice koji to reflect these origins. Meanwhile, the colourless crystal soy sauce is made with ultra-modern methods and is a world first.

Clear soy sauce has the same aroma and flavour as traditional dark soy, with strong umami notes. Use it to create clear dressings for fresh green salads and vegetable side dishes. Or try it as a deep umami flavour in glazes, sauces, even cocktails.

The dark soy in this set is sweetened with wasanboon sugar. The traditional Japanese sugar takes 20 days to make. Sugarcane is harvested, pressed, then boiled, skimmed, dried, rinsed, and ground into distinctive fine grain. Use the sweet soy sauce to season salmon or roasted meat.
