Fillets of mackerel in olive oil are incredibly tasty and make a brilliantly easy toast topper for lazy Sunday evening tea. The Mediterranean mackerel fillets arrive fresh, and are then cleaned and de-boned by hand before being preserved in Spanish olive oil, which gives them a rich and round flavour. 

Try these Mediterranean mackerel fillets mixed through mashed potato, then deep fry in balls to make salty, umami-rich potato croquettes. Serve with a simple tomato dipping sauce.
